Milk Fish Fry – South Indian Style

Deep fried and really spicy fried fish recipe that is very prevalent in South India. Typically this recipe is used for King fish steaks, but it also can be used with Milk Fish or even Salmon. Milk fish does have a lot of thin bones, and you have to be very careful while enjoying the fry.

This one is a spicy fried fish style dish, that goes very well with white rice and curries. Milk fish does have a lot of bones and has to eaten very carefully. You may have to use your hand occasionally to take out small thin needle like bones of this particular fish, but it does have a very good taste and the effort is ultimately worth it. This South Indian Style Milk Fish Fry recipe includes quite a few healthy spices, that also adds to the flavour of this dish.

You can get fresh Milk Fish in Asian Stores that sell sea foods. Many times they also clean and cut for a small extra charge. It takes about 2 minutes to mix all the spices and and a few minutes to marinate.

  • Marination time: 5 minutes
  • Cook time : 4 – 7 minutes

Let’s look at the ingredients and steps

Ingredients

  • 1 lb Milk Fish, Cut into pieces
  • Oil to fry

Spice mix

  • 2 tbsp Red chilli powder
  • 1/2 tsp yellow turmeric powder
  • 1 tbsp table salt
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 1/2 tsp black pepper powder

Steps

  • Mix all the spice mix ingredients with 1 tbsp of water
  • Thoroughly coat the fish pieces with spice mixture
  • Let it sit for about 5 minutes
  • Heat oil in a deep frying pan
  • When the oil is hot add the fish pieces covered in spice 2 at a time
  • Cook until the fish is fully cooked, about 4 to 6 minutes
  • Move the fried fish to a bowl with paper towels to absorb extra oil
  • Serve hot with Rice and curries

  2. I used Milk fish with skin intact. The skin is deep fried with all spices and is extremely crispy fresh from the deep frying.
  3. Available at most Asian grocery store where they cut fresh milk fish into 4 pieces.
  4. If the spice level is high for your tastes you can squeeze fresh lemon juice just before serving. You can reduce the quantity of Red chilli powder next time.
