Masala Puffy Omelet

One of the best breakfast omelet that we love at our home. It’s so easy to make, full of flavor and spices and every one in the family loves it. We are going to look at a simple Masala Omelet recipe today.

For weekend breakfast we normally have scrambled eggs or fried eggs with salt and pepper. But many times we prefer the Masala omelet as its a breakfast by itself, goes very well with bread, bagel, tortilla, etc, and has all the items in one dish. Plus the way this is cooked the omelet would be thick, puffy and very filling.

Ingredients

  • 4 large eggs
  • 1 medium red onion finely chopped
  • 2 small thin green chillis finely chopped
  • 1/4 teaspoon salt 
  • 1 pinch turmeric powder   
  • 1/4 teaspoon ground black pepper   
  • 2 tablespoon finely chopped fresh coriander
  • 1 small fresh tomato finely chopped   
  • 1/4 teaspoon coriander powder   
  • 1 tablespoon butter 

Steps

  • Beat the eggs in a bowl
  • Add all other ingredients except oil and beat well 
  • Heat up a wok/deep pan and add the oil
  • When the wok is hot, pour half the egg mixture

  • Switch to medium heat and cover with a lid to make the omelet puffy
  • Cook for about 4 to 5 minutes or until the omelet is mostly cooked
  •  Remove lid and flip the omelet
  • Cover with lid again and cook for about 2 minutes 
  • Remove the omelet from the wok and serve hot with ketchup

Tips:     

  1. Can use canola oil instead of butter       
  2. You can skip the green chillis altogether, but they give you the best taste
  3. Serve hot, fresh from the stove.   
  4. Any remaining egg mixture could be covered and safely stored in the fridge for about a day.
